Houston Bucket List

Living inside the loop and working downtown has allowed me to spend a lot of time in Houston and experience many of the great things this city has to offer! If you’re looking for something fun to do or a new restaurant to try, I’ve done the work for you and compiled a list of our favorites!

  • Buffalo Bayou Brewing Co (this could also fall under places to eat, but there is an awesome view of downtown from the 3rd floor in the brewery!)
  • Buffalo Bayou Park also shows a great skyline view of downtown. Map to Houston Police Officers’ Memorial – this is a great area to walk your dog, ride your bike, or go for a run. 

Norway

Tied with New Zealand, this is the most beautiful place we’ve ever been!

I’ll try and give a high level itinerary of the 10 day/9 night trip we did with my family. My parents took all 6 of us (myself, Matt, my brother, and his wife) to Norway. There are so many highlights, it’s going to be difficult to wrap up into one post.

We flew into Oslo and stayed at the Comfort Hotel Karl Johan in Oslo.

The Royal Palace – Oslo, Norway

We then did the “Sognefjord in a Nutshell Tour” which takes you on the Bergen Railway from Oslo to Myrdal, then the Flam Railway from Myrdal to Flam, and finally on a boat from Flam to Balestrand. This is an all day excursion but such an incredible way to see the beautiful fjords of Norway. This night we stayed at Midtnes Hotel in Balestrand.

The next day, we took another boat on a 4 hour trip through Sognefjord from Balestrand to Bergen and stayed at Thon Hotel Rosenkrantz Bergen.

Bergen

Following our visit here, we traveled via bus from Bergen to Stavanger and stayed 3 nights at a town house in Stavanger. My parents used to live and work here so we were fortunate to spend some time with their old friends and they showed us they house they once lived in! It is really a beautiful and charming town. I had visited once before with my family, prior to this trip, but it was even more exciting getting to go back with our significant others and hear about some of my parents fondest memories.

A major highlight of our trip was hiking Preikestolen (Pulpit Rock). It is known to be one of the world’s most scenic hikes! As with any hiking, make sure you bring a backpack filled with several water bottles and some snacks to have while you take a break at the top and enjoy the view. 🙂

We flew from Stavanger to Tromso, the northernmost city in the world! It is often called “The Gateway to the Arctic” because the city gets more Northern Lights than anywhere else in the world. We stayed at the Clarion Collection Hotel for 2 nights and 1 of those nights we went on a Chasing Lights tour! Many of the locals told us we probably wouldn’t see the Lights, that it was early in the year and they likely would not be visible until a few weeks later. To our surprise, we actually got to see the Northern Lights and it was the most spectacular experience of my life. It is truly unexplainable and felt so surreal that all 6 of us were able to witness it together. To further solidify our faith, when the Lights became really radiant and we were all standing together looking at the sky, they formed the shape of a “W”. My maiden name is Walker so as you can imagine, this was really special and chilling for my family. A moment I am confident we will all remember for the rest of our lives.

After that ‘once in a lifetime’ experience, we flew back to Oslo the next day, stayed the night at a Comfort Hotel near the airport and flew back home to Texas the following day. We are so thankful my parents brought us along on such an unforgettable trip!

Riviera Maya, Mexico

April 2016

Matt was a groomsmen for our friends wedding in Mexico! It was a pricey trip, but we were so glad we were able to go and spend 4 nights there to celebrate them. We stayed at the El Dorado Royale in Riviera Maya. It is an adult only, all-inclusive, 5-star resort and is one we would definitely go back to on vacation!

This was at their wedding reception on the rooftop of Generations Riviera Maya. They were so lucky with gorgeous weather and an amazing view of the beach!

We LOVED going on this excursion to swim with the dolphins!! They are such sweet animals and seemed to be well taken care of at this facility. I’ll link Dolphin Discovery so you can check them out!

Orlando, Florida

February 2016

The happiest place on earth!!! During this trip we visited the Disney World theme parks: Magic Kingdom, Hollywood Studios, and Epcot, and then we also went to Universal Studios! It was a lot to fit in to one trip but there is so much to do and see. Even though it rained on us a bit at Universal, we still had an absolute blast!

Of course there are lots of fun rides but some of my favorites, that I remember, were the Seven Dwarfs Mine Train, Pirates of the Caribbean, and the Tomorrowland Transit. The last one is a neat way to ride around and see all of the attractions in the Tomorrowland section. If you have young kids, you can search the rides on their website to filter height requirements and thrill level to map out which rides you want to visit (saves you from having to sort through it all at the park). If you’re a couple of 20-somethings that want to relive your childhood (like us) well then ride them all, my friend. And get the FastPass!

Epcot

If you aren’t familiar with Epcot, it is basically a huge theme park in the shape of a circle that showcases 11 countries: the US, Norway, Germany, the UK, Italy, France, Mexico, China, Japan, Morocco, and Canada. Outside of the US, I had visited 5 of these countries with my family prior to our Disney trip and it was really neat to see how the different cultures were highlighted, especially with the food they served at each.

Our favorite ride at Hollywood Studios was Star Wars!

We were SO excited to be at Universal and have good weather for the first half of the day!

The Wizarding World of Harry Potter!

I’d like to say that we’re BOTH Harry Potter geeks but Matt will tell you that because I haven’t read the books, I am not. Fair. I loved the movies though.

We stayed at the Gaylord Palms Resort & Convention Center (above) in Kissimmee, FL. I’ve been impressed by every Gaylord hotel I’ve stayed at and they all seem pretty consistent, so I don’t think you can go wrong here.

Napa Valley, California

For our one year dating anniversary, Matt and I went to California to explore San Fran and Napa Valley! We stayed at the Clift Royal Sonesta Hotel in Union Square during our time in San Francisco. It was a beautiful (also affordable) 4-star hotel and a really great location.

There are so many things to do and see! One of the highlights for me was this tiny, hole-in-the-wall place in Chinatown called House of Xian Dumpling and they have the absolute BEST chicken fried rice I have ever had in my life!! Seriously go check it out if you go to SF. The first time I went, locals told us about it and they did not disappoint! We also typically stop by Fisherman’s Wharf and grab lunch at Pier 39. Pier Market is a really yummy restaurant there with great views and you’ll usually get to see seals on the docks close by!

Napa Valley!!!

Ah, I could never get tired of this area. Here are some of our favorite wineries that we visited:

This was at a cute little restaurant called R+D Kitchen in Yountville that we went to for dinner with some friends and, of course, tried more wine.
